Bachelor of Science in Nutrition:
Nutrition Science Option

Program Overview

The Nutrition Science Option provides students with an integrative curriculum well-grounded in the basic sciences with practical application of the principles of nutrient biochemistry and metabolism to understand how diet can impact health and disease. The program is designed to meet the requirements for application to health-related professional schools and programs, including graduate study in nutrition and related disciplines. Nutrition Science students have access to a dedicated pre-health advisor in the College of Human Sciences to assist students in course selection, the professional school application process, and career planning.

The Nutrition Science Option also has agreements with the Auburn University Harrison School of Pharmacy for entrance into pharmacy school and Bluefield University in partnership with VCOM-Auburn for its anesthesia assistant program. Both partnerships permit students to take only three years of undergraduate classes before starting in the respective programs. Students will begin the application process in their junior year. After successful completing of first year, the College of Human Sciences will approve conferral of Bachelor of Science in Nutrition/Nutrition Science.

Student Testimonial

"The nutrition science option was an appealing choice for me because it fulfilled the requirements for health and professional schools while at the same time, provided me with exposure to topics ranging from macronutrient metabolism and medical nutrition to diabetes, obesity and cancer. I also had the opportunity to participate in basic science research in the laboratory of Dr. Kevin W. Huggins. This proved to be an invaluable training experience as it affirmed my goal to pursue a career as a biomedical scientist."

Mission

The mission of the Nutrition Science option at Auburn University is to provide a high-quality program of study that integrates core nutrition science courses with additional courses in chemistry, physics, and biology to prepare graduates for entry into professional/graduate schools or nutrition-related careers dedicated to enhancing human well-being and quality of life.

The Nutrition Science curriculum will:

  1. Produce graduates that are competitive for acceptance into postgraduate academic programs.
  2. Produce graduates with a sound scientific understanding of complex nutrition issues related to health and disease.
  3. Produce graduates committed to the enhancement of human well-being and quality of life.

Upon completion of the NSPM curriculum, students will be able to:

  1. Describe the digestion, absorption, and metabolism of the energy yielding nutrients (carbohydrates, lipids, and proteins).
  2. Describe the digestion, absorption, and metabolism of the non-energy yielding nutrients (vitamins and minerals).
  3. Determine nutrient needs and recommendations associated with different life cycle stages.
  4. Effectively communicate through well-organized writing that enhances a reader’s ability to understand nutrition research findings through critique and analysis of primary research studies in nutrition science.
  5. Identify nutrient requirements to maintain health and body function and know food-sources for each nutrient.
  6. Describe the basic concepts of nutritional genomics through the effects of nutrients on gene regulation and nutrient-gene interactions on human health.
  7. Generate an effective e-portfolio as a mechanism for professional development in nutrition science.
